The Mercer Genesis (forged) and Wüsthof Classic lines both use X50CrMoV15 stainless steel. Yet kitchen knife enthusiasts consistently report that Wüsthof knives hold an edge longer. The explanation lies in heat treatment — the process of heating and cooling the steel to achieve desired hardness, toughness, and microstructure.

X50CrMoV15 Steel Basics

• Carbon: 0.50%
• Chromium: 15%
• Molybdenum: 1.0%
• Vanadium: 0.15%

This is a well-balanced steel when properly treated: it can achieve decent hardness (56-58 HRC) with excellent corrosion resistance. The "recipe" is only half the story; heat treatment unlocks its potential.
